3 lb Country ribs Pork (cut into serving pieces)
1 Head Garlic
2 Tbsp Soy Sauce
4 Tbsp Pickapeppa sauce (This is a jamaican sauce similar to Lea & Perrins steak sauce)
1/2 tsp Black Pepper (freshly ground: I prefer the thompson gourmet pepper supreme )
2 Tbsp Olive Oil
3/4 c Balsamic Vinegar
chopped jabanero pepper to taste (easy on this: 1/2 tsp is too much for some of us)
Cooking Instructions:
preheat pan and slightly brown the pork in olive oil
Add the garlic, jabanero pepper and marjoram. Mix to evenly coat the pork.
Add balsamic vinegar . Let simmer for 5 minutes.
Add the rest of the ingredients before covering. Cook slowly until the pork is tender (about 45 minutes).
Transfer pieces of garlic to a seperate pan and quickly saute in oil until slightly brown. only 2 seconds.
